Cotopaxi Farms prides itself on producing sustainable, high-quality, great tasting, nutrient dense beef that is Pasture Raised in a free-range setting; Grass Fed with forage that is native to our area; and finished on one of the nation’s few, premier Non-GMO Verified Grain products. Our Black Angus cattle are raised without added hormones, antibiotics, steroids or pesticides. This process is slow and diligent, but the result is beef that has all the health benefits of grass fed protocols, but with the type of flavor and texture that we have all come to love and expect when enjoying premium, grain fed beef.
Typically, in order to get clean, locally sourced, premium beef, you are forced to sacrifice flavor to some degree because you are buying beef that is 100% Grass Fed.
At Cotopaxi, while we firmly believe in the health benefits and animal welfare practices normally associated with grass fed cattle, we also know that the reason we all love beef is for the flavor that we have come to know and expect. Flavor comes from marbling, and marbling comes from fat, which is a direct result of a diet that includes high portions of grain.
Unfortunately, the grain products that beef cattle are traditionally fed are inundated with chemicals and by-products that can wreak havoc on our bodies and even on the bodies of the cattle that consume it.
Our pasture raised, grass-fed, certified non-GMO grain finished protocol provides the perfect alternative solution to the commercially raised or grass fed beef dilemma, and we are positive that you will agree...results in the most flavorful and buttery beef that you can buy regionally.
Processing and Pricing
Cotopaxi Farms beef is sold by the ‘Half’ steer. This season, we have a total of 6 animals that will be harvested and sold, making 12 Halves available on a ‘first come, first serve’ basis. Please read on to learn more about just how much meat a Half will produce on average, and be sure to note that if it seems like more than you and your family can consume over the next 12 months, you only need to partner with a friend and share it right down the middle!
We have worked with the processor to specify a premium Cotopaxi Package that is heavy on steaks of all kinds and select cuts, and lighter on secondary cuts, ground beef and roasts. However, as you will see below, there are some opportunities to customize your package if you would like.
On average, the Cotopaxi Package will include plenty of ‘thick cut’, 1 1/2"; NY Strips, Ribeyes, Filet Mignon and Sirloin Steaks; Chuck Roast, Flat Iron Steaks, Skirt Steaks, Flank Steaks, Beef Stew, Kabobs, Stir Fry, and Short Ribs; *Sirloin Tip Roasts or Sirloin Tip Steaks, London Broil, Rump Roast, Eye of Round Roasts and incredible Hamburger meat! (*You can also choose to use some of these cuts to make Cubed Steak as an alternative.)
Once harvested, the beef will be dry-aged to perfection for two weeks before being cut, vacuum sealed and flash frozen. Your order will be ready for pick up approximately two to three weeks after the harvest date.
Pricing – The price of your Cotopaxi Farms beef is based on the hanging weight, (HW), of the animal. This is the weight of the animal before it is processed into individual cuts. The hanging weight is typically 45% less than the finished live weight, and the processed, take home weight averages about 45% less than the hanging weight. Our Halves will be sold at a wholesale price of $7.00 per lb(HW), which includes Harvest and Processing fees payable to the processor.
Using an example of a steer that weighs 1100 lbs Live Weight (LW), (therefore a Half that weighs 550 lbs), this is an approximate estimate of what you might expect to pay and receive; LW of 550 lbs = HW of 302.50 lbs @ $7.00 per lb = $2117.50 → yielding approximately 150-170 lbs of processed meat.
*Note – A general rule of thumb is that 1.25 cubic foot of freezer space is required to store every 25-30 lbs of packaged weight beef. (170 lbs of meat @ 25 lbs / 1.25 cubic foot = ONLY 8.5 cubic feet of freezer space)
